Handbrake Turns
This is an absolutely critical move to learn - hold down both the accelerator and brake, then push sharply in either direction. This turns your car on a dime and is crucial in order to face opponents and make tight corners. With weapons such as the rockets, you need to be completely in line with enemies before firing, so this move allows you to turn and face them without covering a lot of ground.
If you're getting attacked, you can often use it to pull a 180 round to face your opponent and turn the tables.
